Description

This fig cake is a sweet, moist dessert filled with fresh figs and spiced with cinnamon and nutmeg. A perfect seasonal treat for any occasion.


Ingredients

2 cups of fresh figs (or dried figs if fresh aren’t available)

1 ½ cups of all-purpose flour

1 teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon nutmeg

1 cup sugar

2 large eggs

½ cup vegetable oil

1 teaspoon vanilla extract

A pinch of salt


Instructions

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix the flour, baking soda, cinnamon, nutmeg, and salt in a bowl.

In another bowl, beat the eggs and sugar until light and fluffy. Add the vegetable oil and vanilla extract and mix well.

Slowly combine the dry ingredients into the wet ingredients, then stir in the chopped figs.

Pour the batter into the prepared pan and bake for 30 to 35 minutes or until a toothpick inserted comes out clean.

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

You can use dried figs instead of fresh if they’re not available. Adjust the sweetness to your taste by adding more or less sugar.
