Description

This Marry Me Chicken Salad combines tender chicken, creamy dressing, crunchy vegetables, and a delicious blend of flavors. Perfect for a light lunch or dinner, it’s sure to be a crowd-pleaser.


Ingredients

2 boneless, skinless chicken breasts (or thighs)

1/2 cup mayonnaise

1/4 cup Greek yogurt

1/4 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1/4 cup fresh basil, chopped

1/2 cup celery, chopped

1/4 cup red onion, finely diced

1/2 cup grapes or apples, chopped (optional)

1/4 cup toasted almonds or walnuts (optional)

1/4 cup Parmesan cheese, grated


Instructions

Cook the chicken breasts until they are fully cooked and tender. You can grill, bake, or pan-sear the chicken. Once cooked, cube or shred the chicken.
In a large bowl, combine mayonnaise and Greek yogurt to form a creamy dressing.
Add chopped sun-dried tomatoes, minced garlic, and fresh basil to the dressing. Stir well.
Fold in the cubed or shredded chicken, celery, red onion, grapes (or apples), and nuts. Gently toss to combine.
Sprinkle the grated Parmesan cheese over the salad and give it one last gentle toss.
Serve chilled over greens, in sandwiches, or as a standalone dish.

Notes

You can substitute chicken for grilled shrimp or even use rotisserie chicken for convenience.
To make it spicier, add jalapeños or red pepper flakes to the dressing.
