Description
A creamy, comforting Round Swamp Farm chicken salad made with rotisserie chicken, fresh lemon, grated celery, and a spice blend. Perfect for sandwiches, wraps, or light lunches.
Ingredients
1 rotisserie chicken, preferably warm
2 stalks of celery with celery leaves reserved
Juice of one lemon
1 ½ cups of mayonnaise (See note)
1 tsp kosher salt
½ tsp ground black pepper
2 tsp onion powder
2 tsp garlic powder
1 tsp chili powder
Instructions
Place the whisk attachment on the mixer. Remove the skin from the chicken and place the meat in the mixer bowl.
Break up larger chunks of chicken gently before mixing.
Grate the celery over the bowl using a microplane or box grater. Add finely chopped celery leaves or substitute parsley.
Add lemon juice, mayonnaise, salt, black pepper, onion powder, garlic powder, and chili powder.
Mix on medium speed until the salad has a smooth, pâté-like consistency.
Transfer to an airtight container and refrigerate for up to 3 days.
Notes
Use a high-quality, classic mayonnaise for best results. Greek yogurt can substitute part of the mayo for a lighter version.
