Description
A fun twist on the classic, Tater Tot Potato Salad combines crispy tots, savory beef dressing, and fresh herbs for a new take on comfort food.
Ingredients
canola oil cooking spray
1 (28 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 (8 ounce) package beef, cut into 1/2-inch pieces
1 cup diced yellow onion
2 tablespoons white sugar
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt, or more to taste
⅓ cup apple cider vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
Instructions
Preheat the oven to 425°F. Cover a sheet pan with foil, spray with cooking spray, and spread frozen tater tots evenly on the pan. Spray the tops of the tots with cooking spray.
Bake for 40-45 minutes, or until golden brown and extra crispy.
Meanwhile, cook the beef in a pan over medium-high heat until crispy. Add diced onions, sugar, pepper, and salt, cooking until the sugar caramelizes. Deglaze with apple cider vinegar.
Let the tater tots cool for 5 minutes, then transfer them to a large mixing bowl. Pour the beef dressing over and toss until evenly coated. Mix in fresh parsley and chives. Adjust salt to taste before serving.
Notes
For best results, choose Tater Tots with minimal ingredients—just potatoes, salt, and oil.
